Spanish Tortilla
3 cups cooked potato
4 eggs
1/2 teaspoon Salt
2-3 Tablespoons olive oil
Optional Additions
Garlic, Kale, Cheese, Herbs, Onion, Sauteed Veggies
Combine ingredients and fry as fritters or put into a greased pan and bake at 350 degrees until set in the center and golden brown.
Salsa
Tomatoes
Garlic
Lemon or Lime Juice
Fresh Cilantro, Parsley, or Basil
Chipotle Puree
Cumin powder
Salt
Combine ingredients and pulse in a food processor or chop to desired texture. Mix well, taste and adjust seasoning to taste.
Remoulade
5 ounces blanched greens (kale, radish tops, turnip tops, mustard, spinach, etc.)
1/2 cup Mayo
2 Tablespoons chopped fresh ginger
1 clove garlic
1/2 teaspoon salt
1/4 cup fresh herbs (optional)
Combine ingredients in a food processor until smooth. Taste and adjust seasoning
