Sesame Broccoli Quinoa Salad

Serves 6-8

It’s the kind of salad that you make on Sunday and then eat all week long for lunch. You can substitute any green veggie you like for the broccoli – try finely chopped raw kale, steamed green beans, or baby spinach.

2c. quinoa
2 1/2   c. water
3 c. broccoli florets cut into bite sized pieces
3c. grated carrots
1 red pepper -diced
1/2 c. toasted sesame seeds -optional

Sesame Ginger dressing
6 cloves garlic -crushed
1/4 c. peeled & finely chopped fresh ginger
1/4 c. apple cider vinegar
1/4 c. tamari
2/3 c. toasted sesame oil
2t. salt

Instructions

  • Rinse the quinoa well with warm water and drain in a fine mesh strainer
  • Combine water and quinoa in a sauce pot, bring to a boil and turn to low. Cook until all the water is absorbed – about 5 minutes. Remove from heat and allow to cool slightly
  • In a large bowl combine dressing ingredients and mix well
  • Add vegetables, sesame seeds, and quinoa to the bowl
  • Gently toss w/ dressing
