Greek Feta Vegetable Salad

It’s nice when a vegetable salad can be prepared ahead of time. This one actually gets better when it marinates for several hours. It complements just about any Mediterranean main dish. Serve alongside roasted chicken, eggplant parmesan, pasta, or make it the centerpiece of a platter with hummus and pita chips.

3c. broccoli florets
2 c. cauliflower florets
1 red pepper – cut into a large dice
¼  c. marinated artichokes - coarsely chopped
¼ c. kalamata olives – pitted

Feta Garlic Dressing

4 cloves garlic - crushed
2 T.  cider vinegar
1 T. lemon juice
1/3c. olive oil
1 ½   T. sugar
½  t. salt
2 T. fresh rosemary stemmed and chopped
2 T. fresh parsley leaves
½ c. feta cheese – crumbled

Instructions

  • Combine salad ingredients in a large bowl
  • In a separate bowl whisk together dressing ingredients
  • Combine feta dressing with vegetables and allow to marinate one hour before serving
