Wholegrain Pancake Mix

I am not all that artistic, so handmade gifts from me are almost always edible. This is a quick and easy handmade gift. Pancake mix is always appreciated, throw in a little jar of preserves or maple syrup and you are on your way to an edible gift basket.

If you don't happen to have oat flour in your pantry you can make your own by blending rolled oats into flour. Put about 1 1/4 cups rolled oats in your blender and blend until very fine to make about one cup of oat flour.  

Feel free to add dried fruit or finely chopped chocolate into the pancake mix for your own special variation.

Wholegrain Pancake Mix

1 cup oat flour

½ cup whole wheat flour

½ cup all-purpose flour

6 Tablespoons Butter

2 Tablespoons sugar

1 ½ teaspoons baking powder

½ teaspoons salt

½ teaspoons soda

Blend all ingredients in the food processor, or with the tips of your fingers until well combined.

If you are giving the mix as a gift glue these instructions to the outside of the bag...

To Make Pancakes Add:

1 ½ cups milk

2 eggs

Pour dry mix into a bowl, add eggs and milk to the bowl and whisk with a wire whisk until well combined.

Pre-heat skillet and lightly coat with butter or oil. Pour approximately ¼ cup of batter onto the skillet for each pancake.

When bubbles form on top of cake and then start to pop, flip the cake and when both sides are golden brown cakes are done.

Top with syrup or preserves and enjoy!
